Smoked Laal Mans my brother made this holiday

Hey folks sorry for not posting you all this while as i was vacationing in Mumbai and Deolia (my village).It was an excellent holidays with rains hitting Mumbai and pleasant morning walks at Marine Drive.

This vacation was full of shopping loads of clothes in Mumbai and a Jersey cow in village which gives around 15 litres of milk every day.

I am posting the recipe for an excellent Laal mans my brother made.Laal means red in Hindi and it comes red chillies from Matahnia village near Jodhpur.This is very spicy and supposed to have it with Millet(Bajra) bread.My brother smoked this meat to give it and extra flavour.





INGREDIENTSWEIGHTMEASURE
LAMB CHOP0.5kg
LAMB LEG0.5kg
SLICED ONIONS700gm
WHOLE GARAM MASALA5gm
BEATEN CURD500gm
MATHANIA RED CHILLI PWD40gm
CORIANDER PWDfivegm
TURMERIC 2gm
GARAM MASALA POWDER4gm
OIL300ml
GINGER  PASTE75gm
SALTTO TASTE 
GARLIC PASTE75gms


METHOD
  • Heat oil and add whole garam masala to it. Cookit for a while.
  • Now add some sliced onions and brown them well.
  • Make a mixture of beaten curd with rest of the ingredients.
  • Now add lamb to the onions and cook till dry.
  • Add in the beaten curd mixture and cook till dry.
  • Place a live charcoal in a small steel bowl and adjust it in center add ghee to it and cover it up with foil.It will take smokey flavour.
  • Add water and simmer till lamb is done. Adjust seasoning and adjust consistency, it should be runny in nature.
  • You can garnish it with fresh coriander leaves.
