KHAUGALLI-- RESTAURANT MUMBAI SUBURBS

Initially to travel from Marine Drive to Versova to try out food seemed to be quiet tiring and exhaustive.I was thinking that the restaurant would be small with very limited menu but to by surprise it was beyond my expectations.Khaugalli located on the main road near Versova telephone exchange owned by a friend is a 200 seater restaurant started few weeks back  which serves food from Oriental to Indian Mughlai to Chaats and has a great many varieties.My menu comprised of Kakori kebab, galouti kebab with sheermal as a starter.Kakori was very close to what i am used to, I think the Chef from Lucknow did a great job. For the main course their was Dal Gosht, i don't remember the name of chicken dish, Black Dal and paranthas. The food was good and worth value for money.They also do home deliveries with the minimum order of 250 rs. The restaurant is divided in two parts the upper part has several carts for chaats and oriental while the lower section was in the shape of railway Bogey and generally serves Mughlai food plus they have a small banquet place.I was told that there is an unusual kebab called Chicken kulfi kebab, I was too full to try it but I am sure it is as yummy and delicious as it sounds.

PAPAD AUR PANEER KA SAAG

PAPAD AUR PANEER KA SAAG



INGREDIENTS

Paneer                       500gms
Poppadoms                 10 nos
Onion chop               300 gms
Yogurt                      300gms
Ginger paste              75 gms
Salt                            to taste
Red chili pwd            10gms
Turmeric                   10gms
Coriander pwd          20gms
Garam masala pwd    10gms
Oil                             100ml
Cumin seeds              5gms
Garlic paste               50gms

METHOD
  • Heat oil add cumin seeds and let them crackle.
  • Add chopped onions and cook them till golden brown.
  • Mix all powdered spices, ginger and garlic paste in yogurt and mix well and smooth.
  • Add this mixture to the onion and cook well.Add water and thin the consistency of gravy. Adjust salt.
  • Cut paneer into small cubes and roast poppadoms and break them.
  • Add paneer and poppadoms to the gravy and simmer for two minutes.
  • Garnish with fresh coriander.

TIPS
You can avoid putting paneer to make it just papad ki saag.
Preferably use Lizzat Poppadoms.
Even if you don't roast poppadoms its OK.

RECIPE--GATTE KA SAAG

GATTE KA SAAG
(Gram flour dumplings cooked in yogurt based gravy)

INGREDIENTS FOR GATTA

WEIGHTMEASURE
BESAN(GRAM FLOUR)300gm
CRUSHED CORIANDER SEEDS2gm
CRUSHED BLACK PEPPER2gm
CUMIN SEEDS2gm
FENNEL SEEDS2gm
TURMERIC POWDER0.5tsp.
RED CHILI POWDER1tsp.
SALTTO TASTE
OIL400ml
YOGURT300ml
SODA(OPTIONAL)0.25tsp.
WATER                                                           TO MAKE DOUGH


METHOD FOR MAKING GATTA
  • ADD ALL INGREDIENTS EXCEPT FOR YOGURT AND WATER AND MIX IT WELL WITH GRAM FLOUR.
  • ADD YOGURT AND WATER AND MAKE A TIGHT DOUGH.
  • ROLL THE DOUGH INTO THIN CYLINDER FORM AND BOIL THEM.
  • ONCE BOILED CUT INTO SMALL ROUNDELS AND DEEP FRY.
  • KEEP THEM ASIDE.

METHOD FOR MAKING GRAVY


Now for the gravy, dilute ginger garlic paste in water and add the mentioned grounded powders to it.
Heat oil, add coriander seeds, red chilli whole, black pepper.
Now add ginger garlic paste. Cook it for 15 minutes.
Make a paste of boiled  onions.
Add boiled onion paste to the pan and cook till golden brown.
Add curd to it. Cook for 30 minutes.Adjust salt.
Add the gatta to it and cook for 2 minutes.

TIPS-- KEEP THE CONSISTENCY OF GRAVY THIN SO THAT DRY GATTAS CAN SOAK
THEM AND GET SOFTER.

YOU CAN SPICE UP DRY GATTAS AND CAN HAVE THEM AS STARTER.
DRY GATTA CAN BE STORED FOR LONG TIME.

EATING JOINTS IN JAIPUR

I WAS PRETTY TIRED AFTER DOING NIGHT SHIFT CONTINUED BY MORNING, BUT COULD NT SLEEP IN THE AFTERNOON SO STARTED WATCHING MOVIE "RAGINI MMS" IT WAS AN OK MOVIE. BUT WAS UNABLE TO PASS THE EVENING SO PICKED UP MY NEW TOYOTA ETIOS AND WENT TO THE MALL CLOSER BY TO HAVE A COFFEE AT COSTA CAFE AT CRYSTAL PALM MALL.
THE MALL HAS FEW RESTAURANTS LIKE SAHIB SINDH SULTAN(AN OK RESTAURANT), INDIJOES FOR YUK SIZZLERS, PIND BALUCHI VALUE FOR MONEY, NICE PIZZAS AT PIZZA HUT ETC.
I HAD REGULAR COLD COFFEE, AFTER A WHILE I WAS ACCOMPANIED BY MY COUSIN. AFTER FEW CHATS WE LEFT THE PLACE FOR SOME DRIVE AND TEAS.OUR FIRST STOP WAS GENPACT, MY COUSIN KNEW THE CANTEEN PERSON OVER THERE SO HE GOT US SOME ICE LEMON TEA OUTSIDE ITSELF, WHICH WAS FOLLOWED BY SMALL CHAI BAR CALLED "TAPRI" CLOSER TO SAWAI MANSINGH STADIUM. THE OUTLET IS ON THE GROUND FLOOR OF A SMALL BUNGALOW WITH VERY BASIC AND NICE VILLAGE LOOK AND CASUAL SEATING.THERE WAS A HUGE MENU FOR TEAS ALONG WITH COMBOS SUCH AS TEA+CIGARETTE ETC.ITS A NICE HANG OUT PLACE FOR EVENING.
APART FROM THIS IF SOMEBODY WANTS TO TRY FOOD IN JAIPUR THEN FOLLOWING ARE THE PLACES AND FOOD ONE MUST TRY AND VISIT.

THINGS AND PLACES TO EAT--TRY PYAAZ KI KACHORI AT RAWAT, IF YOU ARE FOREIGNER AVOID EATING AT CHOKHI DHANI THE FOOD IS VERY UNHYGIENIC.

CRICKETER MATTHEW HAYDEN AT JAIPUR TAKING COOKING LESSONS

    While most players spend their time either in the stadium, lazing around the pool or resting in their hotel rooms whenever they are in the city for the matches, Matthew Hayden preferred to cook!
    Yes, apart from going about Jaipur, and enjoying its sights and smells, the one thing that this cricketer enjoyed was pottering about in the hotel's kitchen.
    "He used to proudly put on his chef's cap and rush to the kitchen to learn some new recipes from Chef Akshraj Jodha. He is a great foodie and a great cook himself. He told us he loves to try out local recipes wherever he goes and therefore when he was here, he wanted to learn Gatte Ka Saag, Lal Maas and Ker Saangri. He took a lot of interest in knowing the differences in Indian spices and the Rajasthani way of cooking. He cooked Lamb Biryani too and served it to his teammates during dinner," says Jodha.

    JAIPUR KITE FESTIVAL


    The kite festival in Jaipur which is held every year in the month of January is a one of its kind festival in India which attracts the best kite flyers of the world to participate in this unique festival and display their kite flying skills.The festival generally takes place in the month of January. I happened to be part of the event when i came to Jaipur as my uncle was the sponsor for the same.It was held at Chogan Singh Stadium overlooking Nahargarh Fort.
